Khichdo with Pudina kadhi????????????? What’s that???? Must be a food item for sure, after all a Gujju guy… hahaha… (A thought that might be pondering in your head)

It is a food item, but no where related to Khichdi, which everyone knows. It is my favorite Gujarati dish out of all.
What are Khichdo and Pudina Kadhi?
Khichdo is like a rice (to describe in terms of looks and usage). It’s not made with rice or any where related to rice. It’s made with Wheat, Milk, Almonds (Baddam), Cashew nuts (Kaju), Ghee, Sugar, etc. It’s sweet in taste and yummy to eat.
It’s generally eaten with Pudina Kadhi (I prefer and its best) or Potato Brinjal Stuffed Vegetable made only in Gujju Style. Pudina Kadhi and The Brinjal Vegetable are Pungent in taste. A combination of Sweet and Pungent, it is an amazing combination and food for heaven.
The Pudina Kadhi, is made with Duppca as we call in Gujju (round rolls made of pudina - like Manchurian). As I don’t like Brinjal, I don’t prefer that vegetable much.
How to Eat?
It has to be served HOT. The Kadhi can not be served cold, as it will get thick. Pour some ghee on Khichdo shake it well and taste the heaven.
Many of them use it as Sweet Dish too, though I prefer to have it for lunch only that too with Kadhi. As It’s pretty heavy and creates lot of heat, It’s advised to eat during winters and day time.
